As for the making of the gravy, I guess your method is kind of a compromise between the IN or OUT dilemma heh? Half in and Half out! That's kind of neat! You get the best of both worlds that way.
As for the wine, I must admit that I've never used it in cooking. I'm sure it adds great flavor but isn't it also very flamable? *S* One time, when I was first married, I had a little....errrrr...FIRE....in the broiler.
I've never "broiled" again! *LOL*
It's a good thing we lived next door to the Fire Station when it happened. SERIOUSLY!
It scared the heck out of me and apparently left emotional scars because to this date, the only BROILED food I eat is RESTAURANT broiled. *S*
